Coconut sugar also called coconut palm sugar or coconut crystals which has become a popular alternative to white sugar due to its flavor and perceived health benefits. Coconut sugar comes from a natural source, the sap of the coconut palm. This sap circulates through the tree in a similar way to maple syrup. To make it, a flower from the tree is cut, allowing the sap to drain into containers. Then the sap is heated, which removes the water from the liquid.
