Coconut sugar also called coconut palm sugar or coconut crystals which has become a popular alternative to white sugar due to its flavor and perceived health benefits. It’s also viewed as being more natural, or less highly processed, than table sugar.

Due to the abundance of coconut oil and shredded coconut, coconut sugar is growing in popularity. Coconut sugar comes from a natural source, the sap of the coconut palm. This sap circulates through the tree in a similar way to maple syrup. To make it, a flower from the tree is cut, allowing the sap to drain into containers. Then the sap is heated, which removes the water from the liquid. The result is coarse brown granules similar to brown sugar. 

Some people confuse coconut sugar with palm sugar. While they have a similar production process, palm sugar comes from a different tree.

There are many benefits of coconut sugar which I am sharing with you:

Coconut Sugar is not refined
It has a low glycemic index
It’s nutrient-dense
It gives you more consistent energy
It can reduce weight gain

As you can see, coconut sugar has many nutritional benefits. That said, it’s still sugar and should always be used in moderation. Coconut sugar can replace regular table sugar in a 1:1 ratio, which means it’s easy to make the transition. It is similar to brown sugar with regard to consistency, though, so make sure you give it a little extra time to melt or combine with other ingredients when you cook or bake with it.
